The Set back
Since I was a child, I have been passionate about fitness and good food, but when my health started declining in my early 40’s everything I thought I knew about good health was of no help or comfort. For three years I battled with debilitating fatigue, brain fog and deep body aches that ultimately cost me my job and my sense of well-being. I was certain this was not how I was supposed to feel at age 45 (or at any age!) so I trudged relentlessly in and out of doctors’ offices, labs and clinics. I collected drugs for hypothyroidism, hormone imbalances and vitamin deficiencies to name a few. Even then, I did not feel vibrant. After years of searching, a Naturopathic doctor suggested eliminating a few common irritants such as gluten or soy to see if my issues where diet related. Of course! Why didn’t I think of that?
Recent culinary training includes the Essential Vegan Dessert Course (2017), and the Professional Plant Based Certification Course (2015) with the Rouxbe Cooking School.
Past adventures include owning and operating an artisan bakery, The SweetRiver Bakery in Pateros, WA. As well as an earlier career planning weddings and catered events at The Westin Hotel in Boston and later at the Hyatt Hotel in Denver.
After college, I had many opportunities to apply my organizational and strategic planning skills, most notably as an event planner in the hotel industry, a project manager for an IT company and later in my own businesses.
In addition to running The Evolving Plate, I am a presenter and coach with the Diabetes Smackdown, a seminar designed to empower people to transform their health.
Many years ago I completed the full Landmark Worldwide curriculum in Seattle, Wa. This was the life altering experience that started my personal development journey. Today, personal growth is still an ongoing process in my life through reading, meditation, and workshops. I also believe that every coach needs their own coach, so I meet regularly with Coach Fletcher Ellingson to help me stretch and reach new goals.
